Domaine de Murtoli has no sign at the roadside, and first-time visitors can easily drive straight past it. That is entirely in character. Behind the anonymous entrance lies a whole valley in the far south of Corsica, near Sartène: some two and a half thousand hectares of maquis and farmland running down to the sea, roughly ten times the size of Monaco and dotted with prehistoric standing stones. Scattered across it are a small hotel in an old farmhouse and around twenty restored shepherds' houses, each one rented out on its own.

The man behind it is Paul Canarelli, a local who began restoring the abandoned stone huts on his family's land in the 1990s. The valley is still a working organic farm, and most of what appears on the table, from the lamb to the olive oil, is produced here. Guests driving the dirt tracks soon learn that the cows were here first and behave accordingly.

The shepherds' houses keep their thick lime walls and stone sinks, softened with terracotta floors and white rugs. Some come with a pool cut into the rock and a little hammam of their own, and a private chef can be arranged for guests who would rather not stir at all. The most remote are half an hour from the farmhouse by four-wheel drive, so neighbours here are measured in minutes rather than metres.

The beach makes guests work for it, though only a little. The car stays by the track, and a boardwalk of driftwood leads for five minutes through the scrub until the maquis gives way to white sand and turquoise water. Lunch is served nearby in a fisherman's cabin, where the fish has had an even shorter journey.

Murtoli has three restaurants, and the most accomplished, La Table de la Ferme, builds its summer menus on the estate's own produce. The evening to book, though, is dinner at La Grotte, set inside a hollow in a huge boulder and lit by candles, where the waiters duck under a low overhang with every plate. Veal turns slowly over an open fire, and on some nights Corsican singers join in. The stone floor is famously slippery, so sensible shoes are advised, which is not something most grand restaurants have to say.

Couples and families both do well here, although the cave is better enjoyed without small children. Between the golf course and a spa among wild roses and myrtle, few guests feel any need to leave. Figari airport is about thirty minutes' drive away, but after that a car is a must, and the isolation that makes Murtoli special also makes the evenings very quiet. The newer annex, A Mandria, is gentler on the budget, though farther from the beach.

On the way out, guests tend to glance back for a sign. There still isn't one, and nobody who has stayed seems keen to put one up.

On the course

Kyle Phillips designed Murtoli Golf Links on instructions not to alter the site: the 12 holes follow the land around olive groves, immortelle fields and pasture, and can be played in up to seven different loops.

A shepherd's house and its pool

Caseddu Arba Barona is one of the smallest houses on the estate: 45 m² for two, with one double bedroom, one bathroom and a kitchen that opens onto a dining area by the fireplace. Its heated pool runs between granite boulders, with the sea in view. By car the beach is ten minutes away, La Table de la Ferme twenty.

Dinner at La Grotte

La Grotte is a natural cavity in a granite outcrop turned into a restaurant, with a wine cellar cut into the rock, a large fireplace and terraces on several levels lit by candles. The cooking is traditional Corsican, with local lamb roasted over the fire. It serves dinner in summer, a polyphonic group sings on Thursdays, and children are welcome.

The beach table

The beach is kept for guests of the estate: fine sand under the rock known as the Lion of Roccapina, reached across the Ortolo river and a dune. La Table de la Plage is built of driftwood, its tables stepping down on terraces to the bar and the sand. The cooking leans to the sea, with a grill for fish, shellfish and estate meat.

The Hôtel de la Ferme

For guests who want a hotel room rather than a house, the Hôtel de la Ferme has nine suites and rooms in the farm buildings, between the olive grove and the vegetable gardens. Each is decorated differently, with old furniture and a fireplace or wood stove. A 20-metre stone pool with a bar looks over the golf course and the maquis.

Why this one

  1. A house, not a room.

Twenty houses, almost all with a pool.

  2. The farm feeds the tables.

Lamb, veal, cheese, oil and honey.

  3. A beach for guests only.

    With its own driftwood restaurant.

The Edit Notes

What a booking site will not tell you.

  1. Choose the house by its drive.

The houses lie several kilometres apart, and each house page gives drive times by car. Casa Eddera, Casa Murtoli, the Rosumarinu hamlet and Caseddu a Persia are about five minutes from the beach; Caseddu a Biada is twenty-five. Casa a Manza and Casa a Manzetta are half an hour from La Grotte, Casa a Figa three minutes. Guests who plan to eat out every night should weigh the restaurant times as heavily as the view, because every evening starts with a drive.

  2. Summer is sold by the week.

In 2026 the houses with two or more bedrooms take a minimum of seven nights from 12 June to 11 September. The one-bedroom shepherds' houses ask two nights from late May, three from mid-June, and seven from 10 July to 23 August. Outside those dates, single weeknights are possible and weekends need two nights. A short summer break therefore points to the Hôtel de la Ferme or to A Mandria, not to a house.

  3. Children and the dining rooms.

La Table de la Ferme and La Table de la Plage take children from the age of twelve only. La Grotte is the one restaurant that welcomes families, and it serves dinner in summer only. Families with younger children will therefore eat more often at their house: most have a full kitchen, groceries can be delivered, vegetables come from the estate garden in season, and catering and babysitting can be booked. At dinner at La Table de la Ferme, men need trousers and proper shoes.

  4. Open April to December, but not all of it.

The estate opens from April to December, and La Table de la Ferme serves throughout that period. The rest follows the weather. La Table de la Plage serves lunch from May to September and dinner from mid-June to mid-September; La Grotte opens up to four nights a week in season and only for themed nights outside it. The beach spa works in summer only; later in the year, treatments move to the farmhouse or into the house itself. From November to January the restaurants close unless stated at booking.

The price question

The money buys room: a stone house of its own, usually with a heated pool, in a valley that is also a working farm, with a beach reserved for guests. It does not buy convenience. Distances are counted by car, summer stays in the houses run for a week, and two of the three restaurants do not take younger children. The fair comparison is a private villa rental plus a hotel's daily service.

What the money buys

  • A house to yourself, almost always with a private heated pool, and daily housekeeping.
  • A beach used only by guests of the estate, with its own restaurant and spa.
  • Meat, cheese, olive oil, honey and vegetables from the estate's own farm.

What it leaves out

  • A short summer stay in a house: seven nights is the rule in high season.
  • Anything within walking distance: beach, restaurants and golf are reached by car.
  • Restaurant tables for children under twelve, except at La Grotte.

Who it suits

Book a house for a week in June or September, for a couple or a family who will cook some evenings and drive to dinner on others, with one night at La Grotte fixed in advance. Guests who want to walk to dinner, or a two-night summer escape, should look at the Hôtel de la Ferme first.

Who should spend elsewhere

  • Loire Valley Lodges

Twenty-one lodge-suites on stilts in a 300-hectare forest near Esvres-sur-Indre, each decorated by an artist, each with a terrace and its own hot tub, on an estate closed to cars, with an organic farm and the restaurant Ardent.

  • Fontevraud L'Ermitage

A hotel of 54 rooms in the Saint-Lazare priory inside the walls of the Royal Abbey of Fontevraud near Saumur, designed by Patrick Jouin and Sangit Manku, with breakfast in the cloister and the abbey grounds open to hotel guests after closing.
