A chef's houseon the Loire.
Loir-et-Cher, France47°35′ N 1°20′ E
The most celebrated dish at Fleur de Loire is a carp. In France that takes some nerve, because carp is a bony, muddy-tasting fish that most anglers put straight back. The hotel itself belongs to a chef, Christophe Hay, and fills a long seventeenth-century former hospice on the left bank of the Loire, with Blois and its royal château on the opposite shore. Hay treats the fish of the river the way other chefs treat lobster, and the carp is his boldest argument.
Hay is a butcher's son from Vendôme who spent five years cooking for Paul Bocuse at Epcot in Florida, in a France built for visitors, before coming home to the real one. The building he took on was founded as a hospice by Gaston d'Orléans and served until recently as a care home. It has been looking after people for well over three hundred years. These days the care includes a sommelier.
Its forty-four rooms fill the wings of a long U around a garden courtyard, and the river side is worth requesting: the Loire slides past below, wide and sandy, and the old town climbs the far bank in a jumble of slate roofs. The room key is a piece of wood, and the plates at dinner come from a potter whose workshop is next door. Plastic, it seems, has been politely shown out.
The old hospice shows through most clearly in the spa, where the indoor pool, fifteen metres long, lies under the original vaulted ceilings. Where the sick were once nursed, guests now float on their backs and count the arches. Convalescence has rarely looked so appealing.
Hay runs two dining rooms. The grand one carries his name and looks out across the river. Between courses, fresh cutlery is produced from a golden egg. The bistro serves pike-perch quenelles with crayfish in a looser mood, under a name worthy of a romantic novel: L'Amour Blanc. It is, of course, a carp.
The obvious first outing is on foot, a short stroll across the old stone bridge to the château of Blois. On the return, the hotel's pastry kiosk lies in wait, and walking past it twice takes real willpower. Fleur de Loire will delight anyone who plans trips around dinner. A car is unnecessary, since trains from Paris take under two hours. Those dreaming of a château in a silent park of its own will want a different kind of hotel.
At the grand table, the carp finally arrives, grilled, in a red wine sauce with crayfish and shavings of truffle, a recipe with roots in the kitchens of Chambord. Anglers can go on throwing carp back if they like. After this, it seems a terrible waste.
Down the road
Two hundred metres from the hotel, along the Loire, the chef's 1.5-hectare kitchen garden keeps an asparagus collection of some fifty varieties, an apple conservatory and a citrus greenhouse.
A room on the Loire side
Only two categories face the river: the Deluxe Room with Loire Views, 30 m² on the second and top floors, most with sloping or beamed ceilings, and the Duplex Suite with Loire Views, 60 m², its bedroom upstairs under the roof. Every other category looks onto the town or the inner courtyard, so the river has to be booked by name.
The spa and its pools
The spa covers 450 m² and works with Sisley: five treatment rooms, a hammam, infrared benches, a row of themed showers and the Herbarium, a planted rest room that continues the chef's citrus greenhouse. Beyond the heated indoor pool there is an outdoor pool facing the Loire, and the fitness room is kept for hotel guests only.
The Christophe Hay dining room
The gastronomic restaurant fills the first floor of the main building: about 35 covers around a kitchen set in the middle of the room, the river on one side and a church's stained glass on the other. Caroline Tissier's floor and wall patterns recall the Loire's sandbanks, and one table sits in the front row, facing the cooks.
L'Amour Blanc over the river
L'Amour Blanc occupies a stone-and-glass building extending the left wing, with the Pastry Kiosk on its ground floor. The dining room and a terrace for thirty under the riverside trees look across the water to the château and cathedral of Blois. The menu runs to wood-fired fish and meat, à la carte or five courses, with a children's menu.

The Edit Notes
What a booking site will not tell you.
01
Book the river by category.
Only two categories are sold with the Loire: the Deluxe Room with Loire Views, 30 m² on the second and top floors, mostly under sloping or beamed ceilings, and the Duplex Suite with Loire Views, 60 m², with the bedroom upstairs under the roof. Superior, Deluxe, Deluxe Triple, Junior Suite and Prestige Suite look onto the town or the inner courtyard. The ground-floor Superior Terrace Rooms are the exception the other way: a furnished private terrace on the courtyard, with the château of Blois in view.
02
Fix the gastronomic dinner first.
The Christophe Hay restaurant serves lunch and dinner from Tuesday to Saturday only, and it closes from 15 to 30 November 2026, on 24 and 25 December, from 3 to 6 January 2027 and from 21 February to 8 March 2027. L'Amour Blanc serves every day, so a Sunday or Monday night still has a table in the house. The front-row Chef's Table, facing the kitchen, is confirmed at booking. Men are asked to wear long trousers and closed shoes in the gastronomic room.
03
Three or four in one room.
The Deluxe Triple Room, 35 m² on the first floor, takes three and looks over the town. The Junior Suite, 40 m², has an open-plan lounge, an extra bed and a whirlpool bath. The Prestige Suite, 45 m² under the eaves with a sofa bed, is the one the hotel itself calls ideal for families; the Duplex Suite also sleeps four. A baby cot, bath and safety gate come on request for children under three, and the concierge books babysitters at a supplement.
04
Leave the car in the garage.
Everything in Blois is a walk away, so the car can stay parked from arrival: the hotel has its own parking and valets. For the wider valley, reception hires out classic and electric bicycles by the day, plus cargo tricycles for families, and sells entry tickets for the châteaux of Blois, Chambord and Cheverny. The concierge arranges private transfers at a supplement. The hotel itself is open every day of the year except 24 and 25 December, when the gastronomic restaurant also closes.
The price question
The money buys a bed upstairs from one of the most talked-about kitchens of the Loire, a spa with two pools and the old town of Blois a bridge away. It does not buy seclusion or a river view as standard: this is a town-edge riverbank building, most rooms face the town or the courtyard, and the gastronomic room rests two days a week.
What the money buys
Dinner at the Christophe Hay table without a drive home afterwards.
A 450 m² spa with a heated indoor pool and an outdoor pool facing the Loire.
The château and old town of Blois within walking distance.
What it leaves out
A Loire view in most room categories.
A park or grounds of its own beyond the inner courtyard.
Gastronomic dinners on Sundays and Mondays.
Who it suits
Book it for one or two nights built around a dinner between Tuesday and Saturday, in a Loire-view category, with Blois and Chambord as day trips. Those who want a château with its own grounds and silence after dark are better served in the countryside south of the river.
Who should spend elsewhere
Les Sources de Cheverny
An estate between Chambord and Chenonceau where a period château, a hamlet of cabins, a lake and stone houses sit among forest and vineyards, with a Spa by Caudalie.
Château Louise de La Vallière
A château hotel in the Touraine countryside with a gourmet restaurant, L'Amphitryon, and a bistronomic one, Le Pavillon Sévigné, plus a bar and rooms in the château and its outbuilding.
