Fifteen rooms,one family table.

Bouitte is Savoyard for little house, and in 1976 that is exactly what René Meilleur built. He was a farmer's son who had left school at fourteen to mind the cows, and with his wife Marie-Louise he put up a small chalet by hand above Saint-Martin-de-Belleville. Then he opened the door to hungry skiers. By his own cheerful admission, he had no idea how to cook.
The valley taught him. Farmers and families from the surrounding villages came in from morning till night, and René took to saying that the house was really theirs. His son Maxime, a former biathlete with a steady hand, came home in 1996 and learned the trade the same way, by doing it. A third generation now stirs the pots, the little house has become one of the most talked-about tables in the Alps, and the name has never sounded more modest.
Upstairs are just fifteen rooms, carved in wood and snug as a hayloft. Old plates and glass domes crowd the walls of the dining room, and a small spa with a pool and a hammam hides below. Strictly speaking, this is a restaurant that lets people sleep over rather than a hotel, and it has never pretended otherwise.
The finest moment comes at dusk, in the hot tub. Steam rises into the cold, snow drifts onto the roofs of the hamlet, and the mountains slide from white to blue to black while, somewhere below, the kitchen gets ready for the evening. It is the hour the little house was built for.
Dinner is the landscape on a plate. Seven aperitifs land at once, like a mountain choir clearing its throat. After them come génépi and wild cranberries, a raclette fritter, trout in lemon butter and snails in garlic butter, made the way René's mother made them. Maxime says the kitchen has dropped the fuss and now goes straight down the fall line, and on the plate it shows.
Then come the helicopters. The little house has been found by people with very large means, and on busy days they drop in from over the ridge. The mood changes in a heartbeat. The rustic room turns slick, the local voices fade, and the whole hamlet seems to hold its breath until the rotors start up again. Those who loved the older, simpler Bouitte may not quite recognise it on such days, and beyond eating, soaking and sleeping, there is little else to do.
The menus are named after walks: Boucle, Balade, Promenade and, for the longest, Grande Randonnée. It is a lovely idea from a family that built its house for people who arrived on foot or on skis and stayed for the fire. A good many guests now arrive by helicopter. They could probably use the walk.
Little house
Bouitte means little house in the local dialect. The family's own account says the plot began as a field of potatoes, exchanged for carpentry work.
The Marie suite
The Marie suite occupies the chalet joined to the main building. A staircase leads to the bedroom and an adjoining lounge with a fire, exposed stone and old wood, and the balcony looks towards the Pas de Cherferie and Méribel. It sleeps up to four with a sofa bed, has a balneotherapy bath with village views, and connects to the Élise room.
The dining room
The gastronomic dining room sits under exposed rafters and chandeliers, with shelves of old glazed earthenware along one wall and windows onto the neighbouring roofs. It is open to non-residents, so hotel guests book their tables like everyone else. Every menu is a surprise; the guest chooses the number of courses, from three to eight, and the kitchen decides what comes.
The hot tub on the terrace
The spa's hot tub is outdoors, on a terrace screened from view, and takes four people. It belongs to La Bèla Vya, the spa the family opened in 2017, and is shared by the guests of fifteen rooms. Children are welcome in the spa with an adult, and a late-morning slot is set aside for them.
The Lac du Lou pool
Indoors, the pool lies against a wall-sized image of the Lac du Lou, the largest lake in the Belleville valley, with balneotherapy jets and a cascade. Loungers line the stone floor, and a citrus hammam, a spruce sauna, two treatment rooms and a herbal tea room complete the spa. Outside visitors may book treatments, so the pool is not always the hotel's alone.

The Edit Notes
What a booking site will not tell you.
01
Plan the nights around Tuesday.
The gastronomic restaurant does not serve every day. In the 2026-27 winter it is closed all day on Tuesday and at Wednesday lunch; in summer 2027 it closes on Tuesday and Wednesday and, in June and September, at Thursday lunch too. A two-night stay that straddles Tuesday leaves one evening without the house's own dinner. The family's bistro, Simple & Meilleur, in the village of Saint-Martin, is the alternative, but in winter it closes on Wednesdays instead.
02
Stairs, terraces and the Augustine suite.
This is an old chalet extended in stages, and many rooms are listed with access by staircase; several mezzanine beds are reached by a loft ladder. The Augustine suite is the one the hotel adapts for reduced mobility, with two partitioned rooms, a balcony and a terrace facing the Cochet mountain. The Marie suite sits in the chalet adjoining the main building, up its own staircase, with a fireplace and a balneotherapy bath with village views.
03
Families need the right pair of doors.
With only fifteen keys, connecting rooms are few and go quickly. The Joséphine junior suite joins the Juliette room for up to six people; the Lucie junior suite spreads over two floors for up to five and connects to Léonie; the Marie suite connects to the Élise room. The Aurélie and Juliette rooms have a mezzanine bed for a third person. Children under ten have their own menu at dinner, and a morning slot is set aside for them in the spa.
04
Two short seasons, several ways in.
The hotel opens for two seasons only: from 5 December 2026 to 18 April 2027, and from 12 June to 12 September 2027. Most guests drive up the Belleville valley from Moûtiers, whose station is 21 km away by taxi. Helicopters land at Val Thorens rather than at the hamlet. Skiers from Courchevel, Méribel or Val Thorens can come down to Saint-Martin and call from the Cochet car park, from where the hotel's car collects them.
The price question
The money buys a bed a staircase away from the Meilleurs' own kitchen, in a house the family still runs, with a spa to fill the hours before dinner. It does not buy a ski-in hotel, a large property or a restaurant open every evening, and breakfast is extra. The real comparison is a resort hotel plus one dinner here.
What the money buys
Dinner at the Meilleur family's own table without a drive home on a mountain road.
A spa with an indoor pool and an outdoor hot tub shared by fifteen rooms.
Rooms each furnished individually with old wood, family pictures and Savoyard objects.
What it leaves out
A lift at the door: skiers come via Saint-Martin, by car or, snow permitting, a groomed path.
A gastronomic dinner on Tuesdays, or breakfast in the room rate.
Much to do in the hamlet itself beyond eating, the spa and sleeping.
Who it suits
Book it for two or three nights built around the restaurant's open evenings, for people who will drive, ski over or take a taxi from Moûtiers and want the evening to end upstairs. Skiers who want to step from the door onto the piste, or a group that needs many connecting rooms, are better placed in one of the resorts.
Who should spend elsewhere
Altapura
Eighty-eight rooms and suites on rue du Bouchet in Val Thorens at 2,300 m, with an in-house ski shop opening onto the snow, a 1,000 m² spa and several restaurants.
Le Kaïla
Sixteen rooms and 22 suites in the centre of Méribel, open from early December to early April, with chef Laurent Azoulay's L'Ekrin and a NUXE spa with a 250 m² aquatic area.
