Saint-Tropez has always been better at nights than at mornings. The peninsula made its name after dark, in the bars of the port and on the long lunches at Pampelonne that drift on into the evening, and most of its hotels are arranged around that rhythm. La Réserve Ramatuelle, on a hillside a short drive away with a pine forest between it and the crowds, was built for the hours that follow.

It is a small house for a palace, and its size is the beginning of its magic: eight rooms and nineteen suites, each with a private terrace or garden above one of the loveliest bays on the coast, the smallest at forty-five square metres. The building is modernist and made of wide glass, so the sea is part of every room, and with so few guests the service can be fitted to each of them. In the pines below stand thirteen villas, each with its own heated pool, butler, housekeeper and chef, for those who want the same calm with a household attached.

At its heart is the spa, a thousand square metres run with Nescens, a Swiss brand that brings a medical approach to the science of longevity. Nescens does not talk about anti-ageing. Its word is better-ageing, and its programmes of three to five days say a good deal about where luxury travel has been heading. A generation ago people came to Saint-Tropez to show off what they had. Some of them now come to work on what they are.

The best hour is early. Before the heat settles on the hills, there is Nordic walking along the paths or a yoga class, and since 2025 a contrast-therapy room where an infrared sauna is followed by an ice bath, the kind of recovery ritual athletes used to keep to themselves. By the time the port is waking up with a headache, breakfast is over and the sea has been looked at properly.

Dinner keeps to the same idea without turning it into a diet. At La Voile, Eric Canino cooks a light, largely plant-based Mediterranean menu, and you leave the table without needing to recover from it. None of this means the night is banned. La Réserve has its own beach restaurant on Pampelonne, and nobody will stop you going down the hill. The hotel simply assumes you will want to come back up.

The calm is complete, and it will not suit every holiday. For a stay built around Saint-Tropez's noise, the house can feel hushed and rather earnest, and a menu of longevity treatments is an odd souvenir of the Riviera. The hotel closes in the middle of October and reopens in spring. The prices are those of a palace, and the villas are another order of money altogether.

In Saint-Tropez, everyone has an opinion about where to spend the night. La Réserve is one of the few places on the peninsula that has thought as hard about where to spend the morning.

Spa on the doorstep

The Deluxe Rooms Sea View with Garden sit on the same level as Spa Nescens.

A ruin rebuilt above the bay

The hotel is not a new building in the pines. In 2009 Jean-Michel Wilmotte took a derelict 1970s structure on the estate, kept its footprint, volumes, render and brickwork, and opened it to the bay with very large windows. The villas cling to the same hillside around it, set in large gardens among the pines.

A garden bigger than the suite

In the Junior Suite Sea View with Garden the outdoor space is larger than the room: 55 m² inside, 90 m² of terrace and garden facing the sea, set with sun loungers, a table for two and armchairs. Yoga equipment comes with the room, so the first session of the day can happen on the grass before anyone else is about.

The pool behind the curtains

Spa Nescens's indoor pool is heated and fitted with jets, and its glazing gives onto a terrace and the pines rather than a basement wall. Since 2025 a bright fitness studio has overlooked the water, used for personal training and reformer Pilates. Around the pool lie eleven treatment rooms, a hammam and a herbal tea bar, with a reformer studio for private sessions alongside.

Breakfast where dinner is served

La Voile is where a hotel guest's day starts as well as ends: breakfast is served here or in the room. The dining room is glazed towards the bay and the wooded hills, and the terrace sits under white shades shaped like sails, voile in French. A collection of original plates by Jean Cocteau, kept through the redesign, remains in the restaurant.

Why this one

  1. A garden bigger than the suite.

The Junior Suite Sea View with Garden has 90 m² outdoors.

  2. A gym above the water.

The 2025 fitness studio overlooks the spa pool.

  3. Breakfast facing the bay.

It is served at La Voile or in the room.

The Edit Notes

What a booking site will not tell you.

  1. The distance from the beach is the design.

Nothing here is within walking distance of sand or the port. Room bookings list a shuttle, subject to availability, to the Place des Lices in Saint-Tropez, to Ramatuelle village, to La Réserve à la Plage and to the five kilometres of Pampelonne, and there is secure outdoor parking. That separation is what keeps the hillside quiet in the morning. The cost is spontaneity: a late evening in town needs a booked ride or a car of your own.

  2. A retreat is a routine, not a clinic.

The Nescens Retreats take their inspiration from the Nescens Clinic in Genolier, Switzerland, but the hotel's own pages describe no medical consultation or tests. What a retreat does is fix the day around three pillars: movement, from nature walks to reformer Pilates; meals and snacks set by the programme; and treatments such as contrast therapy. The named journeys are Mental Wellness Escape, Performance Reset and Women's Better-Aging. A diagnostic check-up belongs in Switzerland; this is a guided routine by the sea.

  3. A villa buys a household only at the right level.

The villas are sold in two service levels. Signature brings a housekeeper, breakfast in the villa, the shuttle and spa access. A dedicated butler, a private chef for lunch and dinner, a chauffeured car and two hours a day of treatments or training belong to Privilege. In winter the villas remain bookable for long stays with a housekeeper and chef, and the spa stays open by reservation. For a couple, a garden suite gives the same view and spa without the contract.

  4. The calm is partly a house rule.

Children under 16 are not admitted to the spa, the indoor pool or the fitness rooms, and the room pages list the Deluxe Rooms and Junior Suites for two people. The early-morning quiet of the spa floor is therefore a policy as much as a mood. The family life the hotel describes happens in the villas, with their own gardens and heated pools and a concierge who arranges family activities. Arriving with teenagers under 16 and a spa week in mind means planning around that line.

The price question

La Réserve charges for what it leaves out as much as for what it has: no beach on the doorstep, no port below the window, few neighbours. What the money buys is a small hotel carrying a spa and a kitchen sized for a far larger one, and mornings built around both. What it does not buy is the Saint-Tropez of evenings on foot, or an open hotel in winter.

What the money buys

  • Spa, both pools and fitness access listed among the inclusions of a room stay.
  • Breakfast at La Voile or in the room, with the bay in front of it.
  • A shuttle to the Place des Lices, Ramatuelle village and Pampelonne.

What it leaves out

  • Walking access to a beach or to Saint-Tropez.
  • A spa week for anyone under 16.
  • Winter dining: La Voile and the beach restaurant close for the season.

Who it suits

A couple who rise early, swim before breakfast and take the shuttle down only once the day has a shape; a group in a villa that wants the house and the hotel's spa together. A stay planned around Saint-Tropez after dark asks for an address nearer the port.

Who should spend elsewhere

  • Cheval Blanc St-Tropez

On the Bay of Saint-Tropez among pines: 32 rooms and suites and the four-bedroom Villa Riviera with private access to the sea.

  • Lily of the Valley

On the Cap Lardier estate above Plage de Gigaro, open all year, with Shape Club programmes in weight loss, detox, sport and better ageing of four to fourteen days.
