There was a time when dinner in this Megève farmhouse came with a view of the cows. Marc Veyrat, the chef in the black hat, ran one of the most celebrated kitchens in France here, and he kept cows and chickens inside the building, behind windows in the walls and even one set into the floor, so that diners could watch the farm while they ate the mountain. It was gastronomy as theatre, and gourmets travelled across Europe for a seat at La Ferme de mon Père.
Then the chef moved on, the animals left, and the house fell silent. When Arnaud Zannier found it for sale, he made it the first of his hotels, the seed of a collection that now reaches from the rice fields of Cambodia to the Namibian desert. More interesting is what he chose not to do. Rather than stage a new spectacle in an old theatre, he turned the theatre into a home.
If Veyrat's house was a stage, Zannier's is a living room. The group's own design studio stripped it back to old oak, wood finished with lime and linen washed soft, and every piece of furniture has been chosen for what it leaves out. There are only twelve rooms and suites, most with a fire of their own, and on a snowy evening nothing in the building makes more noise than the logs in the grate.
The arrangement makes most sense against the way Megève's wealthiest visitors have always skied. For generations the grandest option has been a private chalet, rented with a cook, a driver and someone to light the fires. Le Chalet is that private chalet, with a hotel's service attached. Some forty staff look after those twelve rooms, a car and driver wait at the door, and every afternoon the day dissolves into a goûter of pastries by the hearth, as if the house came with a grandmother.
The restaurant now occupies the old stables, where the animals once lived, and it kept its famous name while lowering its voice. The cooking is first-rate French produce handled without fuss, the room is warm rather than reverent, and diners talk instead of whispering. A wine bar serves small plates next door, and below ground the spa feels like a softly lit cave.
The old legend has left the plate, the table is far simpler now, and a house this small asks for some planning. The slopes are a car ride away, the spa has just two treatment rooms, the restaurant and bar draw plenty of outside guests, and twelve rooms are often spoken for long before the snow arrives.
In its first life, this house fed cows. In its second, it fed critics. In its third, it feeds a dozen households at a time, and nobody at the table is taking notes.
Where it began
Arnaud Zannier opened Le Chalet in 2011 as his first hotel; the group has since added hotels in Cambodia, Namibia, Vietnam and on the Île de Bendor.
Suite 1, around the fire
Suite 1 is the largest room in the house, a 140 m² duplex for up to four. On the first floor the living area is built around an open wood-burning fireplace, with a dining table, a desk and the master bedroom; a second bedroom with its own bathroom is upstairs. The large balcony has the hotel's widest view over Megève.
La Ferme de mon Père
The hotel's restaurant, led by chef Julien Burlat, fills vaulted rooms with antique-style wooden tables and a chalkboard of the day's suggestions. The menu reworks Savoie dishes such as fondue, diots and smoked mountain charcuterie into lighter plates to share, with vegetables to the fore. It is open to outside guests in winter and can be hired for up to fifty seated.
The spa pool
The spa is compact: a heated indoor relaxation pool, a hammam, a sauna, a relaxation area and two treatment rooms, with products from Dr. Barbara Sturm and mēditatif. Treatments run to a schedule, so with only two rooms they are best booked with the stay. For a gym, the hotel sends guests to Le Palais, the large sports complex in Megève, and arranges the transfer.
Pastries in the afternoon
Every afternoon in winter a pâtisserie buffet of cakes, pastries and biscuits is set out in the living room, with hot drinks served by the fire or on the sunny terrace. Later the salon turns into the lounge bar, mixing cocktails from spirits sourced from small independent producers. Both belong to the winter season; in summer the hotel serves breakfast only.

The Edit Notes
What a booking site will not tell you.
01
Ask for a room with a fireplace.
Open fires are listed for Suite 1, Suite 2, Suite 4, the Junior Suites and one of the two Prestige rooms. The other Prestige room has a natural rock wall instead, the two 30 m² Deluxe rooms list no fireplace, and none is mentioned for the duplex Suite 3. Terraces and balconies vary in the same way. The hotel adds that rooms differ from the photographs, so the fireplace is worth confirming in writing when the room is booked.
02
Plan dinners around the restaurant's week.
The hotel's own restaurant page lists La Ferme de mon Père as open from Thursday to Sunday, while the restaurant's website also speaks of welcoming guests every evening. The weekly pattern should be checked for the dates of a stay before dinners are planned. The room is open to outside guests and booking is recommended, even for residents. In winter, room service draws on the restaurant menu, and the concierge books tables elsewhere in Megève for the other nights.
03
Winter and summer are different hotels.
The full house belongs to winter: the restaurant, the afternoon pâtisserie buffet, the lounge bar, room service and the drivers who take guests to the slopes and around the village. In summer Le Chalet runs as bed and breakfast only, without lunch, tea, dinner or room service, and publishes a reduction on suites in July and September. Exact opening and closing dates for each season are not published, so a spring or autumn stay needs checking first.
04
Connecting rooms for families.
Suite 1 sleeps four in two bedrooms over two floors. Suite 3 takes two adults and two children, its living room converting to twin beds, and connects to a Junior Suite. Suite 2 connects to the accessible Deluxe room, and Suite 4 to the other Deluxe room and to the rock-walled Prestige room. Children up to three stay free in their parents' room, extra beds for ages four to twelve go only into suites, and babysitting can be arranged.
The price question
The money buys a house of twelve rooms with a large staff, drivers to the lifts, and a restaurant and salon under the same roof. It does not buy skiing from the door, a large spa, or the same hotel in every season: the full service is a winter affair, the restaurant does not serve every night of the week, and fireplaces are not in every room.
What the money buys
Winter transfers by the hotel's drivers to the slopes and around the village.
An afternoon pâtisserie buffet by the fire, every day of the winter season.
Suites of 50 to 140 m², most with an open fireplace and a balcony or terrace.
What it leaves out
Ski-in, ski-out access: the lifts are reached by car.
A large spa: one indoor pool and two treatment rooms; the gym is off site.
A restaurant on every night of the week, or any dinner at all in summer.
Who it suits
Book it for a winter stay in a suite with a fireplace, with nights arranged around the restaurant's serving days and the driver doing the ski commute. A family that wants a kids' club, a skier who wants to clip in at the door, or a summer visitor expecting dinner in the house is better placed elsewhere.
Who should spend elsewhere
Four Seasons Resort Megève
A ski-in, ski-out resort at about 1,300 metres on Mont d'Arbois: 55 rooms and suites, a two-level wine cellar, a 900 m² spa with an indoor-outdoor pool, and a kids' club and teen zone.
Les Fermes de Marie
Nine connected chalets of rebuilt farm timber in a two-hectare park near the centre of Megève: about 70 rooms and suites, a 1,000 m² Pure Altitude spa with 13 treatment rooms, and a shuttle to the Chamois gondola.
